Our Matcha

Products & Quality

All of our tea is grown and milled in Japan. The region depends on the tea: our Premium and Premium Café matcha and our hojicha come from Uji in Kyoto Prefecture, and our Ceremonial Organic is grown and processed on a single farm in Shizuoka. Each product page lists its origin, producer and harvest. Our partner farms use traditional shade-growing and stone-grinding.

Ceremonial Grade - Our highest quality matcha made from first-flush leaves only. Vibrant jade color, smooth umami sweetness, zero bitterness. Best enjoyed whisked with hot water.

Premium Café Grade - Excellent quality matcha balanced for beverages. Rich green color with robust flavor that shines in lattes and smoothies.

Culinary Grade - Designed specifically for cooking and baking. Strong matcha flavor that maintains color in recipes.

Once opened, store matcha in an airtight container in a cool, dark place. Refrigeration extends freshness - just let the container come to room temperature before opening to prevent condensation.

For best results, use opened matcha within 4-8 weeks. Unopened and properly stored matcha maintains quality for 6-12 months.

Getting Started

Matcha Preparation

Bitterness usually stems from one of these causes:

  • Water too hot - Use 160-175°F water, never boiling
  • Low quality matcha - Poor cultivation or processing creates bitterness
  • Stale matcha - Oxidized matcha loses sweetness and becomes harsh
  • Too much matcha - Start with less and adjust to taste

For best results: bamboo whisk (chasen), fine mesh sifter, ceramic bowl (chawan), and a bamboo scoop (chashaku). In a pinch, a small regular whisk or milk frother can work.

Visit our Matcha Education page for detailed preparation guides.
